A typical Mediterranean dish full of fresh vibrant ingredients

Ingredients

1 tbs olive oil
2 – 3 garlic cloves
1 medium onion and/or ½ leek sliced
4 – 6 large mushrooms
1/2 zucchini or additional green vegetable, sliced
Spinach Bunch
1/2 can tomato diced
1/2 tin or 1 cup of diced or pureed tomato with herbs
3/4 cup of rice
1 and 1/2 cups of chicken/vegetable stock or use stock cubes with water
1/4 cup of white wine
Pinch of salt
1/2 tsp of black pepper
Sprinkle of chili
Sprinkle of sweet paprika

Method

In pot, saute garlic and onion in oil and water as required. Add leek and cook for 2 minutes; add mushroom and zucchini; stir in tomato and rice. Pour in stock with wine and combine ingredients. Add spices and stir through spinach. Place lid on pot and simmer on low heat until rice cooked. Serve with a large bowl of salad or vegetables for a complete meal.
